Green Walnut

Belgium·Fruit Lambic
Tap to rate

Green walnuts with a touch of wine and wild yeasts on the nose; on the palate the fresh roundness of lambic from wine barrels meets the bitterness of the walnuts and a light sourness, with a subtle touch of red fruit from the wood. The unripe nuts are picked in July in the brewery's orchard and macerate in the lambic, which tempers their first bitterness. Blonde, 6.5 % ABV, released in editions since 2015.

◐ Taste

Entry is smooth and round, with the lambic's natural acidity supporting rather than overwhelming. Mid-palate balances the green walnut's inherent bitterness and tannin structure against bright sourness, while oak adds subtle red-fruit depth and dry tannin grip. The finish carries forward dry, nutty complexity with a persistent but gentle walnut bitterness.
