Dr Hop IPA

Tap to rate

Fruity, hoppy and with tasty bitters: an old-school West Coast IPA of 6.5%, brewed with Columbus, Amarillo and Mosaic. Dr. Hop was once the nickname of Muifel brewer Martin Ostendorf. Earlier, each batch used a different hop; the brewery stopped that and made Dr Hop IPA a permanent part of its range.

◌ Aroma

The nose opens with prominent hop character—citrus pith and resinous pine from the Columbus and Amarillo varieties—followed by subtle floral and herbal notes from Mosaic. A light malt sweetness provides a restrained, clean foundation without any yeast-derived esters or phenolics. The overall impression is fresh and balanced, leaning decisively toward noble hop expression.

◐ Taste

Entry brings immediate bitterness and hop resin, grounded by a modest, slightly grainy malt body. Mid-palate displays layered citrus—orange and grapefruit—alongside woody, peppery notes that build gradually. The finish dries considerably, leaving a lingering bitter edge and herbal astringency characteristic of old-school West Coast craft brewing.

◑ Finish

The finish is long and dry, with bitterness and herbal resin persisting on the palate and roof of the mouth. Aftertaste edges toward astringency rather than sweetness, maintaining hop-forward character throughout.
