Fresh Hop Chop is the yearly harvest version of The Chop IPA, loaded with freshly picked Galaxy cones from a hop garden in Myrtleford, Victoria, that go straight from farm to tank without drying. Bright citrus and passionfruit lead, joined by sticky pine and the green, grassy lift typical of undried hops. Underneath sits the malt base of the regular IPA, and a balanced bitterness closes the finish. The aroma is at its most intense while the beer is young.

Aroma

The nose is dominated by fresh citrus and passionfruit notes from the undried Galaxy hops, with a pronounced grassy and herbal character that fades slightly as the beer warms. Beneath lies a subtle pine and resinous layer, with soft malt undertones providing balance. The intensity is most pronounced when the beer is young, making this a beer best enjoyed fresh.

Taste

The palate opens with bright citrus and tropical fruit, immediately followed by a grassy, green-hop bite that fills the mid-palate with herbal pine and sticky resin notes. The supporting malt base provides gentle sweetness and structure without overwhelming the hop-forward character. Bitterness builds gradually and closes cleanly, neither sharp nor lingering excessively.

Serve & Enjoy

How to get the most out of Fresh Hop Chop

Serve at 8–11°C
Refrigerate, then rest 2 min

Serve well-chilled. Session IPAs are at their best cold — the lower ABV means less warmth to balance the hops.

Tulip glass
Recommended for this style

The curved shape concentrates hop aromas and supports a thick head. Essential for aromatic ales and IPAs where the nose is half the experience.

Drink fresh. Session IPAs are brewed to be consumed young — the hops are at their best now.

About IPA

Style guide · what to expect · how to find alternatives

What is a IPA?

IPAs are hop-forward ales with 5.5–7.5% ABV and IBU 40–70+. Bold hop aroma — citrus, tropical, resinous — with firm bitterness and a dry, clean finish.

Finding a similar IPA

hopIQ matches by flavor profile — not just style label. A beer with the same grassy, citrusy, hoppy character as Fresh Hop Chop will score highly even if brewed in a different country or under a different sub-style name.
