51st State IPA

Tap to rate

Modelled on the New England style: unfiltered, light golden and slightly hazy, with bitterness kept mild. Several hop varieties go in late in the boil, followed by two rounds of dry hopping with Citra and Amarillo. The aroma is tropical, with grapefruit, orange, lemon, melon, apricot and peach; the taste brings passion fruit, orange, apricot and peach and ends on a slight grapefruit bitterness. Wheat malt, crystal malt and caramalt give a smooth, creamy feel.

AI-generated sensory profile for 51st State IPA

◎ Appearance

Light golden hue with a soft, diffuse haze characteristic of the New England style. The unfiltered presentation yields a cloudy, luminous appearance that sits between translucence and opacity. Head retention is moderate, with fine bubbles dispersing steadily into a delicate lace.

◌ Aroma

The nose opens with bright tropical fruit notes—melon, apricot, and peach lead, followed by citrus layers of grapefruit and orange with hints of lemon. The late-addition and dry-hop blend of Citra and Amarillo drives this fruity profile, while the wheat and crystal malz provide a soft, slightly sweet backdrop without dominating the aromatics.

◐ Taste

Entry is smooth and full-bodied, with passion fruit and stone fruit flavors unfolding across the palate. Orange and apricot notes persist into the mid-palate, supported by a creamy, well-rounded Malz character from the wheat and crystal malz blend. The finish transitions gently into a mild grapefruit bitterness that remains restrained and does not overwhelm the fruit-forward character.

◑ Finish

The aftertaste is crisp and moderately dry, with lingering citrus notes and a subtle grapefruit edge that gradually fades. The finish is clean and refreshing, leaving a balanced impression without harsh tannins or excessive lingering bitterness.
