St.Bernardus Tokyo

Tap to rate

Born as a one-off in 2012 for the opening of the first St.Bernardus theme café in Tokyo, and back since 2020 with a new recipe. Unfiltered and made with plenty of wheat, it sits somewhere between witbier and saison. Fresh citrus meets floral chamomile, banana and red apple from the yeast, clove and vanilla add a spicy aroma, and the aftertaste is lightly sour and bitter.

◌ Aroma

The nose leads with bright citrus notes—lemon and orange zest—complemented by fresh floral chamomile. Banana and red apple esters from the Belgian yeast create a fruity foundation, while clove, coriander, and vanilla add gentle spice and warmth. The overall impression is aromatic and inviting, with wheat grain providing a soft, grainy undertone.

◐ Taste

Entry is light and crisp, with wheat-forward maltiness and immediate citrus brightness. The palate develops layered fruit character—banana and subtle stone fruit—balanced against delicate spice notes of clove and vanilla. A light bitterness and gentle sourness emerge mid-palate, keeping the beer refreshing and preventing any cloying sweetness, while the mouthfeel remains smooth and feather-light.

◑ Finish

The finish is clean and moderately dry, with a lightly sour and bitter aftertaste that lingers briefly. The witbier's characteristic snap combines with subtle apple and citrus notes that fade gracefully.

Serve at 5–8°C

Serve cold to preserve the delicate citrus and spice aromas. Too warm and the yeast esters become heavy — too cold and the coriander disappears.

Witbier glass

The tall, slender wheat beer glass holds the full 50cl pour and shows off the hazy golden colour. The wide mouth lets citrus and spice aromas drift upward freely.

Best consumed fresh. Citrus and spice notes fade after 3–4 months. Drink within 6 months of packaging.
