About St. Bernardus Prior 8

The Prior 8 is St. Bernardus's classic Belgian Dubbel at 8.0% ABV, named for the Prior of the monastic hierarchy below the Abbot. Deep amber-brown in the glass with a cream-coloured head, it carries the signature Saint Sixtus yeast character in a more approachable register than the Abt 12. The nose opens with caramelised malt, dried plum, and a hint of brown sugar, with background notes of clove and light chocolate. On the palate, the malt sweetness is rounded and harmonious — medium-full body, moderate carbonation, and a clean finish with a gentle dry edge. Dark fruit, caramel, and gentle spice weave through the mid-palate, making it one of the most satisfying everyday abbey dubbels in Belgium. An excellent introduction to the range and the style.
