◎ Appearance

Pours a deep amber-brown, with a slight haze from the bottle refermentation imparted by added yeast and sugar. The head forms modestly and leaves delicate lacing on the glass. Carbonation appears restrained, befitting a beer that spent six months in oak.

◌ Aroma

The nose reveals a striking wine-like character dominated by red and black fruit esters—plum, cherry, and dark berry—recalling the Pinot Noir that once filled the oak casks. Behind the fruit sits a subtle earthy minerality and soft tannin presence, with only gentle malt sweetness in the background. The extended oak aging has imparted complexity without harsh wood notes.

◐ Taste

Rich and full-bodied on entry, the palate bridges beer and wine with remarkable balance. Dark malt provides a round sweetness and body, while the microflora dwelling in the oak casks introduces a gentle, refined acidity that cuts through the alcohol warmth. Bitterness remains restrained at 20 IBU, allowing the fruit and oak complexity to dominate the mid-palate.

◑ Finish

The finish is long and warming, with the 12.5% alcohol presence gently assertive but never harsh. A pleasant drying sensation from the tannins persists, leaving behind lingering notes of oak, red fruit, and a subtle mineral character.

Serve at 9–12°C for the best flavour balance and aroma expression.

The wide mouth and heavy base promote head formation and channel rich aromatics toward the nose. Traditional for Belgian strong ales.
