Galaxy hops lead with ripe stone fruit—peach and apricot—layered beneath bright citrus notes of mandarin and grapefruit zest. A delicate floral quality emerges in the middle, supported by local wildflower honey that adds a subtle, rounded sweetness. Yeast character is clean and restrained, allowing the hop and honey profile to dominate.

The palate opens with full, juicy tropical fruit from the Galaxy hops—mango, papaya, and candied stone fruit—balanced by a smooth, honeyed sweetness that prevents harshness. Mid-palate brings a restrained bitterness and mild citrus dry-out without sharp edges; the 8.5% ABV carries weight without heat. Finish leans toward the hoppy and floral, with residual honey providing a rounded, slightly viscous mouthfeel.

Medium-length finish with persistent hop character and a lingering honey note that prevents drying. Aftertaste settles into subtle floral echoes and gentle citrus fade.
