Mashed to 18 degrees Plato on pale malt and dark crystal with a large kettle addition of sugar, hopped with Willamette and spiced with dried orange peel, then fermented on a blend of ale and lager yeasts. The finished beer went to a winery to be bottled with a sugar dosage and a sparkling wine yeast, and conditioned three years in the bottle. It shows deep amber red under a slight head; caramel, dried fruit and marmalade sit over a firm herbal bitterness, and the maturation leaves it dry and vinous rather than sweet.
