Quetsche Tilquin à l'ancienne

Tap to rate

Fresh, destoned plums, either Prune de Namur or true Alsace quetsche, ferment for four months in a blend of one- to three-year-old lambics, at no less than 250 g of fruit per litre, then referment in the bottle for at least three months. The taste is tart and slightly sour, fruity and round, with a light dryness from the plum skins, and the nose recalls plum brandy. Unfiltered and unpasteurised, from wort by Boon, Lindemans, Girardin and Cantillon.

◐ Taste

Entry is immediately tart and sour, with the substantial 250 g/L plum fruit charge delivering round, juicy midpalate character. The wild lambic fermentation provides a gentle funkiness and complexity that balances the tartness, while fine tannins from plum skins add a light, drying grip. Finish is crisp and dry, with the sourness remaining prominent but integrated into the overall structure rather than harsh.
