Gueuze Tilquin à l'ancienne
Lambics of one, two and three years, matured in the gueuzerie's oak barrels, are blended and left to referment in the bottle for at least six months. The nose is lemony, the taste tart and dry with a roundness that suits newcomers, plus a light dry bitterness from tannins in young oak. Built on wort from Boon, Lindemans, Girardin and Cantillon, 60 % malted barley and 40 % wheat, with only aged hops in the boil. On average it takes two and a half years from brew to bottle.
