◎ Appearance

Pours a tawny russet hue with good clarity and a persistent cream-colored head. The color sits at the amber-brown boundary, reflecting the blend of pale and crystal malts with chocolate undertones. Carbonation is moderate and well-integrated, supporting fine lacing around the glass.

◌ Aroma

The nose leads with malt and dried fruit notes, particularly raisin and dark stone fruit. Subtle chocolate undertones emerge from the specialty malts, while the classic English hop blend (Fuggles and Goldings) contributes a gentle floral and herbal backdrop without dominating. The overall profile is warm and inviting rather than assertive.

◐ Taste

The palate develops rich soft-fruit character reminiscent of a traditional Dundee cake—dried fruits, candied notes, and warm spice. A gentle sweetness from the crystal malt balances the modest bitterness (28 IBU), creating a rounded, approachable mid-palate. The malt structure carries the beer without heaviness, allowing the fruit and spice notes to linger.

The finish is silky and smooth, with lingering gentle sweetness and a soft herbal fade from the noble hops. The aftertaste remains dry and clean, without sharp edges or astringency, leaving a pleasant malt-tinged memory.
