Operis presents a pale golden hue with excellent clarity, typical of its modest SRM of 6. The beer displays a fine, persistent head with delicate lacing that clings to the glass. Carbonation is moderate and well-integrated, creating a refined visual presentation befitting a carefully aged mixed-culture Brett saison.

◌ Aroma

The nose is dominated by floral and herbal notes derived from wild yeast fermentation, layered with earthy undertones reminiscent of mushroom and forest floor. Oak influence is evident but restrained, adding subtle vanilla and dry wood character without overwhelming the delicate aromatics. The overall bouquet is vinous and complex, with a light tartness apparent on the nose.

◐ Taste

The palate opens with a dry, refined entry displaying elegant floral and grassy notes balanced by earthy minerality. Mid-palate reveals the funky character typical of Brett fermentation alongside subtle oak tannins and a building tartness. The finish is lean and dry, with lingering acidity and a slightly funky, complex aftertaste that invites contemplation rather than immediate satisfaction.

◑ Finish

The finish is persistently dry with a moderate length, leaving a pleasantly tart and slightly funky impression that evolves gradually. Acidity and wild yeast character linger without harshness, rewarding patient sipping.

Serve at 8–12°C. Saison is refreshing but complex — cold works, but slightly warmer shows its farmhouse character.
