◎ Appearance

Pale golden hue with excellent clarity and a fine, persistent white head that clings to the glass with steady adhesion. Bright carbonation rises in thin streams, creating a lively visual presence befitting a Double IPA. The body shows good depth and luminosity.

◌ Aroma

The nose opens with assertive grapefruit and forest pine, characteristic of the Mosaic and Simcoe blend. Beneath these bold citrus and resin notes lies a softer layer of ripe stone fruit—peach—with an intriguing candy-like sweetness evocative of bubblegum. The overall bouquet is complex and inviting, balancing sharp and sweet facets.

◐ Taste

The palate enters with medium-weight malt sweetness from the wheat grist, providing structure without cloyingness. A pronounced bitterness builds through the mid-palate—clean and lingering—yet is gracefully offset by residual sweetness and the gentle warmth of 8% alcohol. The hop character remains integrated, favoring texture over aggressive edge.

The finish is clean and moderately long, with the bitterness receding into a warm, slightly sweet fade. Alcohol presence registers as gentle warmth rather than burn, leaving the palate refreshed and inviting another sip.

Serve at 8–11°C for the best flavour balance and aroma expression.

The curved shape concentrates hop aromas and supports a thick head. Essential for aromatic ales and IPAs where the nose is half the experience.
