Duchesse de Bourgogne presents a deep red-brown hue, pouring with deliberate clarity beneath an off-white head of modest but stable retention. The color reflects the long maturation in old oak foeders, showing the characteristic brick-red tones of a classically aged Flanders Red. Carbonation is gentle and restrained, appropriate to the beer's contemplative profile.

◌ Aroma

The nose opens with tart sour cherry and redcurrant, layered over pronounced balsamic vinegar and age-derived oak character. Underneath lies a dark caramel sweetness with whispers of vanilla and wood spice from months in the foeder. The balance between fruit acidity and caramel richness creates a complex, inviting bouquet without sharp or vinegary dominance.

◐ Taste

Entry is clean and tart, with cherry and redcurrant acidity cutting across the palate. Mid-palate reveals soft brown-sugar sweetness and residual caramel that rounds the sourness without masking it, creating a pleasant tension between acid and malt. The tannins from wood aging sit quietly in the background, adding texture rather than harshness.
