Huerta Madre

Tap to rate

Sour, dry and sparkling, with many layers of aroma and flavour and a dry apple-cider character. The wort cools in the open air of the Murcian huerta and ferments slowly in a wine barrel with whatever yeasts and bacteria arrive, nothing added. It is a limited edition that pays tribute to the origins of brewing, to the mother huerta and to the mother of the huerta.

◌ Aroma

A layered nose dominated by dry orchard fruit—green apple, pear skin, and a subtle stone-fruit character—over a foundation of light, crisp acidity. Underlying notes of wild yeast and subtle funk emerge on extended exposure, with a faint mineral quality and hints of white wine oak integration. No hop aroma is present; instead, the fermentation itself drives the aromatic profile.
