Pale Sour

Tap to rate

Pale Sour is gently tart and delicately sweet. Liefmans, Ommegang's sister blendery in Belgium, makes it with a mixed-culture fermentation in open copper vats, followed by months of aging in stainless steel. New batches are blended with older ones, and the beer reaches 6.9% ABV at 9 IBU. It is back as a limited release in June 2026.

Tasting Notes

AI-generated sensory profile for Pale Sour

◎ Appearance

Pale Sour presents a luminous pale golden hue with excellent clarity and fine sediment suspension typical of bottle-conditioned wild ales. The head forms delicate, wispy foam that clings to the glass in fragile lacing, dissipating gradually to leave intermittent wisps. Carbonation is gentle and restrained, releasing fine streams of bubbles that sustain the beer's elegant presentation.

◌ Aroma

The nose leads with bright acidity and stone fruit esters—hints of green apple and white peach—layered beneath subtle funky notes from mixed-culture fermentation. Soft yeasty undertones emerge without astringency, complemented by a whisper of honey and bready Malz character that grounds the profile. The overall impression is restrained and refined rather than assertive.

◐ Taste

Entry is gently tart with a fine, mouth-drying sourness that develops into nuanced complexity across the mid-palate. Peach and apple notes interweave with subtle farmhouse funk and a honey-like sweetness that never cloaks the underlying tartness. Bitterness remains minimal at 9 IBU, allowing the interplay of sour and sweet to dominate, finishing dry with lingering acidity.

◑ Finish

The finish is clean and relatively short, with pleasant residual tartness and a mouth-drying sensation that invites another sip. Aftertaste carries fading fruit notes and gentle funkiness, leaving the palate refreshed rather than fatigued.
