Coolship Camerise is spontaneously fermented beer aged on honeyberries grown in Maine, a fruit whose flavor sits between grape, blackberry and cherry. Barley, raw wheat and aged whole-leaf hops make up the wort, which cools overnight in the coolship and takes in wild yeast from the air before spending more than two years in French oak wine barrels. The honeyberries are then added for four to five months. The beer is ruby red, with fresh raspberry, blueberry and Concord grape over oak and a light funk, finishing tart and refreshing.
