Das Mammoth ist ein West Coast IPA mit 6,2 Prozent und mit 60 IBU das bitterste Bier des Kernsortiments. Strata, Simcoe, Chinook und Cascade geben die Richtung vor: zuerst blumig, dann harzige Kiefer, Grapefruit und eine breite Zitrusnote. Helles Malz und Karamellmalz bilden ein kräftiges Malzgerüst, das den Hopfen trägt, ohne ihn abzumildern. Die Bittere ist ausgeprägt und hält bis in den Abgang an.
