The nose leads with pronounced grainy millet notes, clean and subtly sweet without the round maltiness of barley. Underneath, regional organic hops contribute a delicate herbal and floral backdrop, while hints of honey and citrus zest emerge on closer inspection. Entry is crisp and slightly tart, with lemony and grapefruit acidity that recalls water kefir's brightness. Mid-palate reveals the grain base's inherent sweetness balanced against a light, juicy sourness, while organic hops deliver only a whisper of bitterness (15 IBU) that complements rather than dominates. The mouthfeel remains dry and lean, never cloying, finishing with a gently astringent grain character.
