Persona Non Strata

Tap to rate

Smooth and very fruity, a double dry-hopped NEIPA built on a single hop: Strata in its Cryo form is the only hop in the beer, so there is no blend of varieties. It was developed together with friends from TRVRS in Trier. Pilsner malt, wheat and oats make up the grist. A Yankee & Kraut New England IPA from Ingolstadt, Bavaria, at 6.7% ABV from a 16° Plato wort.

Tasting Notes

AI-generated sensory profile for Persona Non Strata

◎ Appearance

Pale golden-yellow with a soft haze that diffuses light throughout the glass, characteristic of the style. A creamy white head forms readily and clings to the glass with fine, persistent lacing. Moderate carbonation creates a gentle mousse that sustains the foam structure.

◌ Aroma

The nose leads with tropical stone fruit — mango and peach — layered with bright citrus notes from the Strata Cryo hop. Beneath the fruit sits a soft, bready maltiness from the wheat and oat blend, with a whisper of grain sweetness that never overwhelms. The double dry-hop treatment adds a clean, resinous quality without any harsh vegetal character.

◐ Taste

The palate enters soft and juicy, with the fruity character flowing across the tongue before a moderate, well-integrated bitterness arrives mid-palate. Wheat and oat contribute a creamy mouthfeel and subtle breadiness that balances the Strata hop's citrus-forward profile. The 50 IBU sits comfortably without astringency, allowing the stone fruit and citrus to remain the focus through to the swallow.

◑ Finish

The finish is clean and moderately dry, with tropical and citrus notes tapering gradually into a light, refreshing aftertaste. No lingering harshness or oxidation; the beer leaves the palate crisp and ready for another sip.
