Shonks
Shonks is the brewery's recurring IPA, brewed each year in the run-up to Christmas and named after Piers Shonks, the dragon slayer of a local legend whose tomb lies a mile from the farm. Nelson Sauvin and Citra go in on both the hot and the cold side, finishing with a double dry hop. The result is thick and juicy: gooseberry and a vinous edge up front, then peach, mango and lime. Oats and wheat in the grist give a soft, smooth body.
