◐ Taste

Entry is crisp and tart, with the grape and wild yeast strains creating a lively, wine-like acidity that frames the palate. Mid-palate develops berry jam and dried orchard fruit layered over subtle herbal and leather notes; the funky character adds complexity without harsh edges. Dry finish with minimal residual sweetness emphasizes the tannins from extended aging and grape contact.

◑ Finish

Long and lingering, with the sourness and funky notes persisting cleanly into the aftertaste. A slight tannic grip and persistent fruitiness complete the experience without astringency.
