Phenomenology of Spirit

Tap to rate

Caramel, port and coffee with a very soft acidity. This dark Farmstead ale ages in oak barrels, port and wine barrels among them, at 6%. It began in 2011 as the brewery's first collaborative saison, brewed with friends at Tired Hands, McKenzie and its sister brewery Grassroots in Denmark, and fermented in French oak with brettanomyces and resident microflora. Its name follows Hegel's masterwork.

◌ Aroma

The nose leads with roasted coffee and caramel sweetness, layered with subtle port-wine and oak character from extended barrel maturation. Beneath these dominant notes lies a restrained funkiness—earthy, slightly vineyard-like—from the brettanomyces and wild microflora, with a whisper of spice and fermentation complexity. The aromatic profile is cohesive rather than assertive, inviting deeper exploration.

◐ Taste

Entry is smooth and full-bodied, with coffee and dark caramel forming the palate's foundation. Mid-palate develops rich notes of stone fruit and subtle oak tannin, while the brettanomyces imparts a dry, slightly astringent character without harshness. Bitterness remains restrained at 28 IBU, allowing the malt complexity and barrel character to dominate. A gentle spice and yeasty minerality thread through the finish.

◑ Finish

The finish is long and dry, with lingering caramel and coffee notes gradually giving way to a crisp, slightly funky minerality. A subtle warming from the 6% ABV provides gentle closure without alcohol burn.
