Tasting Notes

AI-generated sensory profile for Rullquin

◎ Appearance

Pale straw to light golden hue, translucent with a subtle haze from its unfiltered nature. The head is modest and ephemeral, dissolving quickly to a thin collar. Carbonation is gentle and restrained, consistent with the six-month bottle refermentation.

◌ Aroma

The nose opens with bright vineyard acidity and aged wood — a direct expression of one-year-old lambic maturation in oak. Underneath lies earthy funk and a whisper of dried stone fruit, with the darker malts from Rulles Brune contributing subtle notes of dried cherry and undergrowth. The overall impression is dry and complex, inviting rather than aggressive.

◐ Taste

Entry is bone-dry and sharply sour, the lambic blend asserting itself immediately on the palate. Mid-palate reveals woody tannins and a clean, cidery tartness balanced against the deep malt character of the Brune, which offers restrained notes of dark fruit and subtle spice. The finish is persistently dry, with no residual sweetness to soften the sour edge.

◑ Finish

Long and drying, the acidity lingers with oak-derived bitterness and a faint funky mineral quality. The aftertaste is refreshingly austere, inviting another sip without cloying.
