🌍 USA · Imperial Stout · One of 120 Imperial Stouts in hopIQ

Gray Monday began as a hazelnut version of Black Tuesday, made for a molecular gastronomy dinner at an Orange County restaurant, and has returned in many vintages since. The current release is double barrel-aged, first in bourbon and then in rye whiskey barrels, with hazelnuts and vanilla beans added. Hazelnut and vanilla open the nose, backed by roasted malt and dark chocolate. The rye barrels add a dry, spicy edge to the dense, sweet body, and the high strength shows as warmth in the finish.

AI-generated sensory profile for Gray Monday

◎ Appearance

Deep black-brown color with minimal light transmission, characteristic of a high-gravity Imperial Stout. The dense foam settles to a thin tan collar with modest lacing retention on the glass. Carbonation is restrained, appropriate to the weight and strength of the beer.

◌ Aroma

The nose opens with prominent hazelnut and vanilla, layered over roasted malt and dark chocolate notes. The double barrel-aging contributes a subtle spice and oak character, with bourbon undertones grounding the sweeter aromatics. The high alcohol is present as gentle warmth but remains integrated.

◐ Taste

The palate is dense and sweet on entry, with hazelnut and vanilla establishing the dominant flavor profile. The rye whiskey barrel-aging introduces a dry, peppery spice that cuts through the body and prevents the beer from becoming cloying. Roasted malt and dark chocolate provide structure underneath, while the 20.9% ABV manifests as warming alcohol throughout.

◑ Finish

The finish is long and warming, with the alcohol heat and rye barrel spice extending into the aftertaste. Hazelnut and a faint cocoa dryness linger on the palate.
