◎ Appearance

Pale golden with a subtle haze, reflecting the beer's natural wine-like character and mixed-culture fermentation. The head is delicate and ephemeral, settling into a thin collar with modest lacing. Carbonation is gentle and restrained, appropriate to the farmhouse tradition and extended aging in wood.

◌ Aroma

The nose leads with floral impressions—honeysuckle and dried flowers—layered over stone fruit, particularly pear and white peach. Underneath runs a subtle funky complexity from the mixed cultures and wood aging, reminiscent of hay and soft barnyard notes. The Pinot Blanc pomace contact adds a faint white-wine dryness and subtle oxidative character without dominating.

◐ Taste

Entry is bright and delicately fruity, with pear and peach leading into a dry, nearly austere mid-palate. The mixed-culture yeast expresses itself as a gentle prickle and complexity rather than overt sourness, while the pomace contact contributes a mineral dryness and subtle tannin structure. Bitterness is absent to minimal, allowing the fruit and floral character to carry the palate.

◑ Finish

The finish is clean and moderately long, fading into a dry, slightly dusty aftertaste with lingering peach and floral echoes. A subtle astringency from the pomace rests on the back of the palate, drawing the experience toward its white-wine ancestry.

Serve at 6–9°C for the best flavour balance and aroma expression.
