Dva kohouti Místní pivo 12°

Tap to rate

A lighter twelve-degree Czech lager with a bitterness close to a Pilsner’s, just a touch higher because it is unfiltered and unpasteurised, and a fresh taste from being tapped at about three weeks. Double-decocted from Pilsner and Munich malt, hopped three times with Žatec Poloraný červeňák and Saaz Special. Adam Matuška and Lukáš Tomsa created this flagship, and the first six batches went straight into the tanks without a test brew.

◌ Aroma

Noble hops dominate the nose, offering crisp herbal and slightly peppery notes characteristic of Saaz and the local Žatec Poloraný červeňák. Beneath lies a gentle bready sweetness from the double-decocted Pilsner and Munich malt. The yeast signature remains restrained—no sulfur or funk—lending a clean, fresh character that speaks to the beer's youth and proximity to the tank.

◐ Taste

Entry is crisp and bracing, with noble-hop bitterness making an immediate statement without aggression. Mid-palate shows good grip from the malt foundation—soft biscuit and light bread notes provide ballast, while the 40 IBU hopping integrates seamlessly rather than dominating. Finish dries cleanly, with the hop bitterness lingering just long enough to invite the next sip.

◑ Finish

Medium-length finish with a gentle, persistent hop bitterness that fades to a clean, mineral dryness. No roughness or astringency; the unfiltered yeast in suspension adds a soft roundness that prevents harshness.
