Dva kohouti Místní Kyseláč 11°

Tap to rate

A raspberry sour that has become one of the house classics. The wort is soured in the kettle with lactobacilli and then fermented with yeast; whole raspberries, blended by the brewers themselves, go in twice during fermentation and maturation, 120 kilograms for every batch. It is top-fermented and hopped with Žatec Poloraný červeňák on a base of Pilsner and barley malt.

◌ Aroma

Dominant red berry fruit character, with fresh raspberry leading the nose—both jammy undertones and bright, tart top notes are evident. Subtle hoppy herbal notes from the Žatec Poloraný červeňák emerge behind the fruit, while a light, bready Pilsner malt foundation provides gentle support. The overall impression is aromatic without being cloying, with the fermentation cleanliness allowing berry and hop complexity to shine.

◐ Taste

The palate opens with bright tartness and berry fruit that immediately engages the tongue, supported by a moderate bitterness that balances the acidity without dominating. Mid-palate reveals the whole-raspberry character—a distinct fruit presence rather than a flavorant artifact—layered over a crisp, dry Pilsner malt backbone. The finish is defined by a pleasant sourness and gentle herbal spice, with the low ABV (4.2%) allowing the acidity and fruit to remain the primary voices.

◑ Finish

The finish is refreshing and relatively clean, with lingering acidity and a faint hop spice that fades gracefully. A subtle malty dryness persists on the palate, inviting another sip.
