Volcano IPA

Tap to rate

The longest-running IPA from Summerhall, built on Scottish extra pale barley with cara and crystal malt for a firm, malt-forward backbone. European and US hops all go in on the hot side, which gives floral and lightly spicy notes, a little citrus peel and pine, and an assured bitterness instead of a juicy dry-hop character. Caramel and biscuit round out the picture; the mouthfeel is smooth and rounded, the finish dry and bitter. Fermented with a clean American ale yeast.

◌ Aroma

The nose opens with herbal florality and a gentle spice character from the high-temperature hop additions, followed by subtle citrus peel notes and a woody pine undertone. Supporting this aromatic framework are warm caramel and biscuit notes from the Scottish extra pale and crystal malts, creating a balanced, inviting bouquet without heavy fruit-forward dryness.

◐ Taste

The palate enters with a firm, grainy malted backbone that anchors the beer's character, allowing the malt sweetness of caramel and biscuit to establish themselves immediately. The mid-palate brings forward the confident bitterness from the boil-kettle hop regimen, paired with subtle herbal and lightly spicy notes, while citrus peel adds definition without overwhelming. The finish remains dry and bitter, assertive rather than juicy, with the mouthfeel remaining smooth and rounded throughout.

◑ Finish

The finish is dry and emphatically bitter, lingering with herbal and pine notes that fade gradually. A pleasant grainy dryness persists on the palate, leaving an honest, satisfying aftertaste.
