3 Fonteinen Framboos

Tap to rate

An abundant forest-fruit nose unfolds as the glass warms. Whole, hand-picked raspberries, in the 2019 harvest from Huldenberg near Leuven, macerate for months on lambic, and a little more young lambic rounds off the blend. No juices, syrups or sweeteners are added; it is unfiltered and unpasteurised and may lose some colour and aroma with age.

◌ Aroma

A forest of ripe raspberries dominates the nose, intensifying as the beer warms. Beneath the fruit lies a subtle funkiness—earthy, slightly musty notes from months of maceration and wild yeast activity. Floral and herbal undertones emerge, with a whisper of oak and the dry, tannic character of whole fruit skin.

◐ Taste

The palate opens bright and tart, with the acidity of hand-picked raspberries immediately apparent. Mid-palate reveals the underlying lambic structure—dry, complex, and lightly spiced by fermentation. The sour notes persist without harshness, balanced by a delicate sweetness from the fruit itself, finishing with a crisp, berry-driven complexity that lingers.

A long, dry finish leaves the palate refreshed and slightly puckered. The aftertaste carries the memory of fresh fruit and a gentle funkiness, with no cloying sweetness.
