Naturally fermenting saignee juice from a winery in the region goes into the base beer, which then matures in barrel for twelve months; the 2020 release spent a further fifteen months conditioning unfiltered in the bottle. At more than eight percent the acidity turns sharp and edges towards vinegar, the fruit runs from sour cherry through dried plum to red wine, and tannin and oak sit heavily across the finish.
