The mash is soured with lactic bacteria before open fermentation, then racked into wine barrels for a second ferment running from three months to a year and a half, started either with wild-fermenting shiraz grapes or with the living culture left behind in the barrel. The finished blend is reddish brown, with biscuit malt, tart cherry and a savoury, earthy edge under a clean acidity.
