Stones heated over a wood fire are lowered into the wort, where they caramelise the malt sugars. The current vintage is a dark porter made with Australian malts and hopped with Galaxy and Fuggles. It smells of roasted coffee and dark chocolate, with biscuit, caramel and a light smoke from macadamia wood. The bitterness is gentle and earthy, the body full.
