hopIQ found 10 beers that share Defenestration's hoppy and bitter character. Clean malt character under hops with herbal, spice, floral and stone fruit notes, while Kveik yeast adds citrus. Very dry, bitter, hoppy and medium-bodied. For its fifth election season the recipe was revamped with a changed malt and hop bill and Kveik for primary fermentation; at packaging it gets sugar plus fresh Saccharomyces and Brettanomyces yeast for conditioning, then ages for several months.
