A wet-hop IPA brewed every autumn since 1996: undried whole-cone Centennial from Washington goes into the kettle within 24 hours of picking. The beer pours clear copper with an off-white head. Fresh hops give citrus blossom, grapefruit and orange peel, rose and pine, with green, grassy and earthy notes typical of undried cones. A caramel malt base keeps the body smooth and medium-full, and the finish is dry with a lingering, earthy bitterness.
