Ambush ist das Hauptbier der Brauerei, ein trübes Pale Ale, an dem mehr als ein Jahr entwickelt wurde. Weizen, Hafer und eine sehr großzügige Kalthopfung sorgen für ein trübes, tiefes Gold mit kräftigem weißem Schaum. In der Nase stehen Mango und Ananas, dazu kandierte Zitrone; im Geschmack setzt sich das fort, ergänzt um Anklänge von Honigmelone und Mandarine. Wenig Kohlensäure und der Hafer machen das Bier weich und seidig, der Abgang bleibt saftig und nur ganz leicht trocken.
