Deep ruby red with dark mahogany undertones, presenting a luminous yet serious color that speaks to the beer's abbey heritage. A thick off-white head forms at pour, demonstrating solid foam stability and fine lacing that clings to the glass as the level drops. The body shows good density without cloudiness, and carbonation registers as moderate and well-integrated.

◌ Aroma

The nose opens with forward toffee and caramel notes, underpinned by the spiced complexity of coriander. Fresh ripe orange blossom and citrus zest create brightness above the darker malt foundation, while dark candi sugar contributes subtle raisin and dried fruit undertones. The overall impression is festive and warming, with no sharp alcohol burn despite the 8.5% ABV.

The palate leads with creamy milk chocolate that coats smoothly without astringency, quickly joined by zesty lemon acidity that cuts through the sweetness. The candi sugar backbone provides earthy raisin and dried stone fruit character, while 30 IBU of Perle, Tettnang, and Huell Melon hops arrive as a gentle, floral restraint rather than assertive bitterness. The mid-palate feels full-bodied and velvety, with coriander adding subtle herbal dimension.
