Paulaner traces its origins to the Minim friars who began brewing in Munich's Neudeck monastery in 1634. The monks created the Salvator Doppelbock as a liquid bread substitute during Lent — every Doppelbock ending in -ator is named in its honour. Today Paulaner is one of the six breweries licensed to serve at the Munich Oktoberfest and the world's leading Hefeweizen brand, exporting to over 70 countries. The brewery moved to a modern new facility in Langwied in 2016, with the historic Zacherlbau in Au serving as headquarters.
