Palmers Brewery
Brewing has run on the banks of the River Brit in Bridport since 1794, when the Gundry family, rope and net makers, built the Old Brewery. Independent and in the Palmer family since 1896, it is the only thatched brewery in the UK. Palmers brews with water from its own spring, Maris Otter malt, a mash tun, an open-top copper from 1937 and a single house yeast on record since 1976. Five ales and a craft keg go out to its 50-plus pubs across Dorset, Devon and Somerset.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
