Clausthaler
Clausthaler is a German brand that makes nothing but non-alcoholic beer. It belongs to Binding-Brauerei AG in Frankfurt am Main, part of the Radeberger Gruppe, and takes its name from the former municipal brewery in Clausthal-Zellerfeld in the Harz mountains, which Binding had taken over. Work on a controlled fermentation dates to 1973, and the beer reached the market in 1979. Extra Herb joined in 1995, the unfiltered Naturtrüb in 2018. Binding's Frankfurt brewhouse closed in 2023; the brand does not state where it is brewed now.

How we measure this
Two thresholds are at work here:
- The signature list shows notes that recur in at least 6% of this brewery's beers. A low bar — enough to flag a pattern, not high enough to call it an exclusive trait.
- The peer comparison below shows only notes where this brewery's coverage differs from similar breweries by at least 20 percentage points. A higher bar — enough to call a real difference, not a nudge.
A note can appear on the signature list without appearing in the peer comparison: it recurs here, but similar breweries do the same thing.
