Hatz-Moninger Brauhaus is the result of the 2010 merger of two historic Baden breweries: Brauerei Moninger, founded in Karlsruhe in 1856 by Stephan Moninger, and Hofbrauerei Hatz AG, which had operated in Rastatt since 1863. Moninger's brewery grew to become Karlsruhe's largest by the late nineteenth century. The merged entity established a new joint brewhouse in Karlsruhe-Grünwinkel, which was subsequently acquired by the Scheidtweiler family in 2018. In 2025 the Paulaner Brauereigruppe assumed operations at the site.
