Sir Peché

Tap to rate

Fresh-off-the-tree peaches, a sweet and tart interplay and tropical fruit shape this sour. The peaches were left on the trees a little longer, trucked in overripe and added to the fermenters sliced open. Brettanomyces, lactobacillus and pediococcus ferment it, and American oak finishes it. 6.5% ABV and 5 IBU, brewed in Hershey, Pennsylvania.

◐ Taste

The palate delivers a compelling sweet-tart interplay; peach juice leads the charge, followed by a bright acidity that cuts cleanly through the malt foundation without becoming harsh. Brettanomyces and lactobacillus contribute subtle funky, peppery complexity mid-palate, while American oak adds dry, vanilla-touched structure. The finish moves toward dryness, with lingering tropical fruit notes and a gentle oak tannin grip.
