Saaz

Tap to rate

A blend of younger and older wild ales, fermented and aged from eight months up to two and a half years, then dry hopped for over six months in an oak foeder with Czech Saaz hops. The nose is grassy and herbal, with chamomile, rose, fresh peach, a little funk and hay; the palate adds slight hop bitterness, balanced sourness and a fairly dry finish that recalls natural cider. A 6.8 % wild ale from Den Helder, made for longer ageing.

◐ Taste

The palate balances restrained hop bitterness with a refined, moderate sourness that builds gently across the mid-palate. Oak integration is understated, allowing the bright acidity and Saaz hop bitterness to frame a dry, lean body that recalls natural cider rather than typical ale warmth.

◑ Finish

The finish is remarkably dry and sustained, with a tart edge that lingers without astringency. The aftertaste echoes dried grass, light florals, and a faint orchard minerality characteristic of extended wild-ale aging.
