The Leafcutter

Tap to rate

A hazy IPA that returned by popular vote, first brewed in 2020 and inspired by Vermont IPA: extra pale malt, wheat, flaked and naked oats give an opaque, slick body. Simcoe in the whirlpool brings pine, fresh cut grass and a hint of sweet mango, then a Citra, Mosaic and Azacca dry hop adds soft blueberry, sticky pineapple and succulent nectarine before a resinous, bitter pine finish. 6.8% ABV.

Tasting Notes

AI-generated sensory profile for The Leafcutter

◎ Appearance

The Leafcutter presents a pale golden hue with pronounced haze throughout, characteristic of a well-executed Vermont-style IPA. The opaque body scatters light diffusely, while a creamy white head forms readily and clings to the glass with sustained lacing. Carbonation appears moderate and even, supporting the soft, slick mouthfeel contributed by the oat bill.

◌ Aroma

The nose opens with bright Simcoe-driven pine and freshly cut grass, grounding the profile in vegetal freshness. Beneath lies a soft tropical sweetness—hints of mango and nectarine—while the Citra, Mosaic and Azacca dry hop blend introduces sticky pineapple and blueberry notes that soften the initial resinous character. Wheat and oat contribute a faint grainy undertone without dominating.

◐ Taste

Entry is smooth and approachable, with the oat and wheat malt providing a silky, slightly creamy body. Mid-palate develops tropical stone fruit—pineapple, nectarine, subtle blueberry—balanced by moderate bitterness and herbal pine notes. The finish turns drier and more resinous, with lingering pine and grassy hop character asserting itself without harsh astringency.

◑ Finish

The aftertaste persists with dry, resinous pine and a faint grassy grassiness, fading gradually over several minutes. Bitterness settles to a pleasant level, refreshing rather than aggressive.
