Strawberry Rhubarb

Tap to rate

Bright, sour and effervescent, this Thumbprint release evokes Mom's strawberry rhubarb delights and the happy memories of childhood. Diploma Master Brewer Dan used strawberries to tame the wild tart fermentation of local rhubarb, which went into the sour fermentation. It is part of the Thumbprint Series, brewed in limited batches that are never guaranteed to return.

◌ Aroma

Strawberry and rhubarb emerge as distinct fruit notes, with the tartness of rhubarb prominent beneath the sweeter berry aromatics. A subtle funk from the sour fermentation adds complexity without overwhelming the primary fruit character. Light and inviting, with no aggressive yeast or fermentation esters.

◐ Taste

Sharp acidity dominates the palate from the first sip, with rhubarb's characteristic tartness leading the charge. Strawberry sweetness enters mid-palate to balance the sour edge, creating a dynamic play between fruit and fermentation character. The finish is bone-dry with virtually no lingering malt sweetness; bitterness remains minimal, allowing fruit sourness to define the entire experience.

◑ Finish

The finish is short and clean, with the sourness fading quickly to leave a dry, puckering sensation on the lips and palate. No astringency lingers; the aftertaste remains fruity but brief.
