🌍 Germany · Hefeweizen · One of 244 Hefeweizens in hopIQ

Die Wahre Weiße joined the Perlach range long after Jakob's two founding beers and is the house's everyday weissbier, today brewed from organic ingredients at 13.3 degrees Plato. The brewery calls it lively, fresh and fruity. Tasters describe a cloudy, top-fermented beer with a creamy yeast character: banana in front, apricot and lemon behind it, a light clove spice and soft bready malt, with a gentle tartness that keeps it fresh and a full but not heavy body.

◎ Appearance

Pale golden hue with a distinctly hazy, cloud-like suspension from active yeast in suspension. A thick, creamy head forms readily and clings to the glass with good retention, creating fine lacework as the beer is consumed. Bright carbonation is evident throughout, lending the beer a lively visual character.

◌ Aroma

The nose leads with ripe banana and stone fruit—apricot in particular—layered with bright citrus notes of lemon. Beneath the fruit sits a soft, bready malt foundation with hints of light spice reminiscent of clove, along with the characteristic estery warmth of the top-fermenting yeast. The overall impression is fresh and inviting without being overly aromatic.

◐ Taste

The palate opens with those fruit-forward notes—banana and stone fruit—before transitioning to a light clove spice and soft, bready malt character. A gentle tartness runs through the mid-palate, keeping the beer crisp and refreshing despite its full body. The modest bitterness (14 IBU) provides balance without asserting itself, allowing the yeast and malt to remain the primary focus.

◑ Finish

The finish is clean and moderately dry, with the tartness lingering pleasantly to prevent any sense of cloying sweetness. The creamy yeast character fades gracefully, leaving a soft, bready aftertaste that invites another sip.

Slightly warmer than a lager — 8–12°C allows the banana and clove esters from the yeast to fully develop.

Tall and narrow at the base, flaring at the top — designed to hold the abundant foam of a wheat beer while showcasing its hazy golden body.

Best fresh. The yeast-driven banana and clove character fades over time. Drink within 4 months.
