Falkon Botanik

Tap to rate

Botanik is a light sour ale inspired by the Saxon gose, brewed with salt, coriander, mint, juniper and rosemary. It began in 2019 under the name Botanic Gose, and the brewery says it is the true original: the name was shortened to Botanik, while nothing else about the recipe changed. Wheat and barley malts and top fermentation give it the classic gose foundation, with herbs doing the rest.

◌ Aroma

A complex herbal medley opens the nose, with coriander and mint leading the charge, supported by subtle juniper and rosemary undertones. Behind the botanicals sits a soft, approachable wheat Malz character that frames without overwhelming. The salt register is present but restrained, adding salinity rather than saltiness to the overall impression.

◐ Taste

Entry is crisp and lightly sour, with a clean lactic bite that balances seamlessly against the herbal botanicals. The mid-palate reveals layered spice notes—coriander warmth, mint coolness, and a whisper of juniper—while the wheat Malz provides a delicate, slightly grainy sweetness. Bitterness remains minimal (10 IBU), allowing the salt and herbs to define the flavor architecture rather than compete with harsh edges.

◑ Finish

The finish is crisp and refreshing, with lingering herbal notes and a gentle saline dryness that invites another sip. Aftertaste fades cleanly without residual sweetness or cloying malt.
