Duvel is a deceptive masterpiece. At 8.5% ABV, it pours a brilliant pale gold with an enormous white head that takes time to settle — three fermentations, including refermentation in the bottle, drive that distinctive effervescence. The nose opens with waves of fresh pear and apple from the house yeast strain, undercut by white pepper and subtle floral hop notes. On the palate it is bone dry; a bright, almost aggressive carbonation cuts through any residual sweetness, and the bitterness (30 IBU, published) is present but restrained, letting the fruit and yeast character do the work. The finish is clean, long, and deceptively warming. First brewed in 1923 by Albert Moortgat after seeking out the ideal English yeast strain; World Beer Cup gold.
