Heaven From Hell

Tap to rate

A blend that took years to come together: a barrel-aged dubbel and a second beer aged up to four years in barrels, using a technique inspired by Vin Jaune that allows controlled oxidation, joined by a 2024 beer. Nuts, baked umami, oak, dark fruit, chocolate and caramel unfold with a touch of acidity and gripping tannins, and some components rested in up to three different barrels.

Deep amber to light brown, with excellent clarity that reveals the beer's layered aging history. A thick, creamy head forms and persists, clinging to the glass with fine lacing. The carbonation is moderate, appropriate for a complex barleywine of this age and character.

◌ Aroma

The nose unfolds in layers: roasted nuts and baked umami notes emerge first, followed by rich oak and vanilla undertones from extended barrel contact. Dark fruit esters—plum, raisin, dried cherry—mingle with chocolate and caramel, while a subtle vinous acidity adds complexity. The bouquet reflects years of controlled oxidation and multi-barrel maturation.

◐ Taste

The palate is full and viscous, opening with layers of chocolate, caramel, and nutty richness that coat the mouth. Mid-palate brings evident oak tannins and a sour note that cuts through the sweetness, while dark fruit and umami depth provide structure. The 14.9% ABV is present but well-integrated, warming rather than harsh.

◑ Finish
